Parsis are the Zoroastrian descendants of Persian refugees. Fleeing religious persecution during the Arab-Islamic conquest of Persia they settled in India. There they played an important role in the development of Bombay, with many acquiring wealth and prominence. Parsi cuisine reflects their rich cultural heritage, blending their ancient Persian roots with local Maharashtrian and Gujarati traditions.
